Yesterday I wanted to try something new. I love mezze, so hummus and baba ganoush are on my menu frequently, but then i stumpled upon this recipe. This has to be one of the healthiest dips/spreads I’ve ever seen. When I ate it fresh, the aubergine taste was quite dominant, but eaten straight from the fridge on some toasted bread, it has a very similar taste to bruschetta.

Preparation

I learned a little trick a while ago to make aubergines less soggy. You can get some water out of them by salting and letting them sit for a bit, but that is tedious and you can achieve the same result by cutting them up and putting them in the microwave for a couple of minutes. The recipe is really simple otherwise, just cut everything up, mix it with oil and the spices and put it in the oven for half an hour.

Then, blend it for a bit. I wanted to have some texture so I didn’t go overboard with the mixer.

Finally, I topped it with some more paprika, parsley and olive oil. They recommend eating it with pita bread, but I only had regular bread at hand but that works just as well.
